Spatchcock, or butterflied, chicken is a whole chicken that has had its back bone removed to flatten it out, allowing for quicker and more even cooking. This is the best way to grill or sear a whole chicken and get delicious crisp skin on all of the bird. This is also a great way to get seasoning in all the cracks and crevices of the bird.

This cut is best grilled over a bed of coals on a grill. Keep it skin side down for most of the cook and only flip it at the end of the cook - this will allow the skin to get extra crispy.
